LEMON CRAB PASTA

WHAT'S INSIDE:


Basil (for garnish)
Crab Clusters ( or imitation crab)

4 Cloves of Garlic

Pasta Noodles


1/2 Onion Diced

Parmesan Cheese
1/4 Cup Heavy Cream

3/4 Lemon Juice
SPICES:
1 TSP Black Pepper
1 TSP Chili Flakes
1 TSP Oregano
1 TBSP Paprika
Salt to Taste
HOW TO MAKE IT:
1. Start by boiling in salted water your favorite kind of pasta. I used regular sized pasta for this recipe, but you can use fettuccine, angel hair, ect. Cook that until al dente and then drain.
2. While the pasta boils, chop 1/2 and onion and 4 cloves of garlic. To a hot pan cook down those veggies in 1 tbsp of avocado oil. Cook until translucent then salt to taste and add in 1 tsp black pepper, oregano, chili flakes and 1 tbsp paprika If you want it spicier add in 1 more tsp of chili flakes.


3. As that cooks, steam in water or a microwave, crab clusters. Fresh crab is optional, Costco has some cost effective crab clusters or you can go with imitation crab either works.
4. To the pan of cooked onions, add 1 TBSP of butter, a splash of the pasta water and juice of 3/4 of a lemon. The more lemon you add in the more tangy it gets. Then add in 1/4 cup heavy cream and let that thicken for 2-3 minutes on high heat.
5. I also added in left over crab boil stock from the other day. This is completely optional but it consists of boiled crab, corn, potatoes and some lemon with Old Bay seasoning. This is not necessary but does enhance the flavor.
6. Throw in your chopped crab, then add back in the drained pasta. Cook for another 3-5 minutes or until the noodles are fully coated. Top with more crab, shredded parmesan cheese, some of that pasta sauce and basil.
