BURRITO BOWL
FEEDS 2-4 PEOPLE

A healthy at home take on a burrito bowl served with cilantro lime rice, veggies, beans and meat.

WHAT'S INSIDE:


1 Can Pinto Bean
1 1/2 Cup Corn (Fresh or Canned)
Ground Beef
1 Lime


1/2 White Onion Diced


3-4 Small Bell Peppers

3 Cloves of Garlic Diced

Cheddar Cheese

Cilantro
2 TBSP Black Pepper
1 TSP Paprika
1 TSP Cayenne Pepper
1 TSP Cumin
1 TSP Garlic Powder
Salt to Taste

HOW TO MAKE IT:
1. Dice bell peppers and corn. To a hot oiled pan, add veggies. Season with salt, cayenne and 1 tsp of black pepper. Cook for 3-5 minutes or until it begins to soften, then remove from pan.
2. In the same hot pan, lightly oil adding in the chopped onions and garlic cloves. When the onion become translucent, add in ground beef. Season with black pepper, paprika, garlic powder, cumin, and salt to taste.

4. Cook down until the beans are almost mushy. You can add in a stock and mush the beans for different texture.To make the cilantro lime rice start by making a cup of rice in a cooker or on the stove.
3. Let that brown, draining oil with a paper towel frequently. Let that simmer for 5 min. In a separate lightly oiled pot, add in canned beans with salt and pepper.

5. Juice in 2/3 of a large lime and a 1 1/2 TBSP chopped cilantro. Add black pepper, garlic powder, and salt to taste. For a creamier taste, replace the salt with 1 TBSP of salted butter. Make your burrito bowl starting with the cilantro lime rice first.
6. Then the roasted corn and peppers with the cooked beans on top of that. Last add in the cooked ground beef. Shred cheddar cheese, top with cilantro. For a healthy replacement of sour cream, I use non-fat greek yogurt mixed with the last 3rd of lime juice. Serve with chips or eat straight from the bowl.
